In the run-up to the festive season fish may not seem like an obvious choice.
This is a shame for a great many reasons not least:
British fish is at its absolute prime during the cold winter months
Fish is light, easy on the digestive system and simply perfect for a season when many of us feel that we eat more than is perhaps good for us
Fish and a glass of red – absolutely! Cool climate reds including Pinot Noir is the perfect match for winter fish. What is not to like?
Fish is the Christmas meal in many countries including parts of Italy and in Poland.
With a focus on both festive meals and delicious, quick meals to enjoy at home in the hectic period leading up to the holidays, we make:
Beetroot & Vodka Gravad Lax with classic Swedish dill & mustard sauce
Raw mackerel Tartar with raw egg yolk, capers & horse radish
Creamy de luxe Prawn or lobster soup with white wine, saffron & dill
Prime cod back set in a Court Bouillon and served with mustard sauce
Whole pan fried plaice or lemon sole with brown butter, lemon & herbs
This class favours delicious recipes over the techniques covered in all our other fish classes. We do cover how to skin a whole flat fish and how to make superlative fish stock from roasted shells & building a classic wine and cream sauce around it.
We also make super simple and perfect mini baguettes because the soup cries out for being eaten with still warm, fresh bread!
We start with coffee/tea and freshly baked cake from our café and finish with a large lunch with wine.
We are found at the very end of Purbeck Road (off Hills Rd by the sixth form centre) where you turn left by Abbey college and then carry straight on for about 60m to the white awnings you will see ahead.
Please note that there is very limited parking on site. We recommend the multi storey at the Leisure Centre less than 10min walk away or the Babraham Park & Ride which stops on Hills Road, very close to Purbeck Rd.
