Summer lunch
Summer lunch in the shade on a terrace. Starched white linen table cloths. A shimmering ice bucket.
This class is a return to what we on the team here, being classically trained, think of as “real” food.
More animal protein and more dairy than the dishes which have been leading the way for the past decade.
Don’t get us wrong – we love our plant based food and it inspires most of the food we cook and eat at home. But there is a time and a place for everything, and as advocates for real cooking, using prime ingredients, we relish more robust dishes.
This class includes:
Ratatouille – trust us, a cracking dish when made right and even better the next day.
Moules Marinière – shallots, garlic, white wine, parsley. Heavenly.
Salade Niçoise – classic French Riviera. Seared fresh tuna, egg, fine green beans, tomatoes, olives, capers, vinaigrette.
Tarte aux tomates – crispy shortcrust, Dijon musera, baked tomatoes, fresh herbs, grated Comté.
Entrecôte café de Paris – rare steak and this classic butter which gets some of its umami from a smidgeon of anchovy.
We are found at the very end of Purbeck Road (off Hills Rd by the sixth form centre) where you turn left by Abbey college and then carry straight on for about 60m to the white awnings you will see ahead.
CANCELLATIONS: 72h prior to class to move to a future date and 7 days for a full refund
