This is not a class – it is a guest chef pop-up in the Bistro, by the amazing Lilan Hiw who trained both front and back of house at the legendary Raffles in Singapore.

Lilian’s previous guest visits resulted in rave reviews.

We start at 7pm and all tables are seated at the same time, with dishes arriving in order.

China Lychee Fizz

Chicken Satay
Tender chicken pieces marinated in ground turmeric and coriander threaded onto bamboo skewers and grilled to juicy perfection; accompanied by red onions, cucumber and a punchy peanut sauce

Rojak
Refreshing salad of sweet pineapple, cucumber and crisp apple tossed in a shrimp paste, molasses and lime dressing sprinkled with a generous handful of crushed toasted peanuts

Singapore Curry Puff
A legendary local snack, these parcels are so light; filled with potatoes and peas in a fragrant curry sauce

Laksa
Indulge in a warming bowl of comfort street food, made famous in Singapore and Malaysia. Laksa is a spicy noodle ‘soup’ dish; delicious combination of firm yellow noodles, succulent prawns, fried beancurd puff, sliced fish cake, boiled eggs and crunchy beansprouts all coming together in a creamy spicy broth

Sago Pears in Palm Sugar and Salted Coconut Cream

Chewy little sago pearls with rich, decadent salted coconut cream and gooey palm sugar syrup! Butterscotch Heaven.
