Thank you for taking the time to scan and read this. Below is some information on gut health and how we approach this in what we prepare and cook for you daily.
Who we are
You may already be a ZOE devotee, in which case you will be familiar with the science we follow.
Our team consists of a group of highly experienced Cordon Bleu and Leiths trained chefs. Since 2008 we have taught the importance of cooking and eating from scratch, using raw, local & a wide variety of seasonal ingredients and to shun processed food.
In 2015 we became the first zero food waste café in Cambridge.
In 2025 we are the first gut friendly café in Cambridge and, we think, far beyond!
What we offer you
- We bake using our own sour dough starters using organic rye, carob, ancient & seeded flour for gut-friendly fibre.
- We use cultured yoghurts, butter milk and Kefir for a wide range of pre- and pro biotic, gut friendly bacteria. We also love the tanginess.
- We buy our dairy and eggs from The Estate Dairy a family owned B-corporation. Herds graze in Cheshire and Somerset and the quality of their milk, butter, yoghurt and eggs has earned the company multiple accolades.
- Our oyster mushrooms are grown and nurtured locally by Messiah Mushrooms who use filtered restructured water and bathe their oyster mushrooms in sound frequencies, including the so called love frequency 528Hz to strengthen the biology of their remarkable mushrooms. Oyster mushrooms can benefit gut health through their fibre content and pre-biotic qualities.
- We make our own pickles, chutneys, sauerkrauts and kimchis – your gut loves them.
- We aim to pack a plant-based punch with our signature dishes including the Spiced chickpeas and the Red lentil Dhal, each made with an average of 25 plant based ingredients.
For a boost of what you crave, we offer our favourite shots:
Gut’s best friend - the yellow shot:
- Kefir for fermented pro-biotics
- Coconut milk for pre-biotics and energy
- Mango for its positive effects on the gut biome
- Lime for vitamin C and antioxidants
Inflammation buster – the orange shot
- Fresh Turmeric for curcumin, a good anti inflammatory.
- As the effect of curcumin is greatly aided by black pepper, we add pepper too.
- Carrots for betacarotene and vitamin A.
- Fresh ginger for aided digestion and for being a strong antioxidant.
- Pineapple for aided digestion, vitamin C and for ints anti-inflammatory propensities.
Healthy heart - the pink shot
- Guava for its fibre, anti-oxidants and vitamin C
- Raspberries for their prebiotic qualities
- Pink grapefruit for lycopene and antioxidants
Anti-oxidant amplifier - the purple shot
- All purple fruit and vegetables get their colour from anthocyanin. We like a combo of beets, blackberries, blueberries & little hint of horseradish as it is packed with anti-microbial, anti-inflammatory and anti-oxidant properties.
If you prefer to get your antioxidants and healthy yeast ferments from red wine, we highly recommend a glass of our house red!
