All our chefs are skilled and passionate artisan bakers, with unrivalled knowledge of everything from Sour Dough to Croissants. We share all that skill in our celebrated one hundred percent hands on bread making classes.
We love the way this class results in simple euphoria – so great is the joy of baking perfect bread!
Our experienced artisan bakers will guide you through fresh and dried yeast, the impact of different types of flour, the secrets of rising, shaping and proving and what is required to make amazingly good bread time and time again.
No previous experience or a dab hand already? Either way, this class will open your eyes to what makes good bread. We start with coffee and cake and finish with a light lunch with wine. You will leave with groaning bags of fresh bread and we recommend creating some space in your freezer prior to the class!
We make a classic, basic white yeast risen dough for a White Tin; a baking soda risen, rich and savoury Scandinavian Soda Rye loaf, we learn how to make enriched dough for feather light little Rye rolls and finish off with our legendary Swedish Cinnamon buns, getting to grips with a sweet, seriously enriched dough. You will leave with a solid grasp of how to make yeast risen dough, with the confidence to expand on it at home.

Our seasonal Italian classes bring sheer joy. With our deep knowledge if Italy and Italian food, these classes effortlessly breezes though hand made pasta, classic sauces, daily bread, main courses epitomising the essence of Italian food and delicious desserts.
We admit that our mouths watered when we designed this autumn menu based on food memories from our home away from home in Le Marche. We hope you will feel inspired to join us for it.
Chestnut flour Papardelle with creamy Porcini, British scallops with pea and Mascarpone purée, whole roasted chicken with wild mushrooms and Marsala wine, Zabaglione with last of the summer fruits.
As always, we welcome you with Italian coffee and fresh cake from our café, lunch with our Italian wines which we buy directly from producers who we visit on our culinary trips to Italy.
Full recipe packs are of course also included.

Fresh pasta is as easy to master as it is sublime to eat.
A true labour of love, hand made pasta is gesture of generosity and one which tend to bring huge joy to those lucky enough to be served.
Artisan pasta, cooked correctly, is easier on the gut than shop bought pasta. It can be kept for days in the fridge, or frozen and transferred straight from the freezer to a pan of boiling water for quick mid week suppers.
You will learn how to make Spaghetti, Tagliatelle, Orecchiette, Ravioli and Tortellini as well as some of the classic Italian sauces and fillings. We include our personal favourites Brown butter & sage, Tomato & Basil, Pesto, Ricotta & Spinach and Broccoli, Chiili & garlic .
Full recipe packs, lunch with wine and pasta to take home included in the class.

All our chefs are skilled and passionate artisan bakers, with unrivalled knowledge of everything from Sour Dough to Croissants. We share all that skill in our celebrated one hundred percent hands on bread making classes.
Having worked with some of Europe’s best artisan bakers and with many years behind us of both teaching sour dough baking and baking our own small artisan batches for the café and bistro, it is fair to say we really know what we are talking about when it comes to sour dough.
Our hand made ryes and sour doughs are a much loved staple in the café. In this class we share our skills and tips on how to incorporate the ultimate bread into your daily life.
The most delicious, healthy and special of breads, sour dough offers not just a better tasting bread – and a fantastic crust – it is also has a low GI, is easier for the gut to digest and and delivers slow release energy. What’s not to like?
While our classic sour dough breads rise, we mix and bake with a 24-hour starter to make Swedish slow risen rolls as well as a free-shaped Lingonberry and Rye rustic loaf.
We start by gathering around for morning coffee or tea with something freshly baked, and finish off by enjoying a light lunch with freshly made bread, while the final trays of bread bake.
The class includes full recipe packs, plenty to baked bread as well a a slow rising dough to bake off the next day and your own freshly created starter which will hopefully bring you years and years of happy sour dough baking.

This is quite possibly the class which most transforms people’s cooking. It is a joy to see guests leave the class beaming, and declaring an absolute love for and confidence in cooking fish.
We are an award winning sustainable business and all our fish is very carefully sourced to ensure its sustainability. To us that means sourced as locally as we possibly can, wild when possible and when not, farmed in ways which allow the fish to live a natural life with freedom to follow natural patterns and caught by sustainable vessels using sustainable fishing methods.
Winter fish includes recipes for Sarde en Saor – a wonderul Venetian mackerel dish, steamed, filled plaice fillet en Papillotte, baked trout, fresh mussels in saffron and white wine, fish stock and two classic sauces to go with your fish – Mayonnaise and Remoulade.
We start with coffee/tea and freshly baked cake from our café and finish with a large lunch with wine.

We have created this class, which pops up with seasonal recipes for autumn&winter, spring and summer, for those looking forward to seating loved ones and friends around the table without too much fuss. The focus here is on taste and presentation; with a minimum of time spent by the stove.

We make perfect pasta dough and how to create little firm Orecchiette as well as sleek Tagliatelle and two classic accompaniments – Broccoli with garlic and chilli; and fresh tomato & basil sauce.
Whilst it is possible to go through life without knowing how to make a perfect Risotto – rather than a stodgy lump of rice – how much better to master this wonderful, dish with aplomb! This version is a light early summer Risotto which the teens will sample individually by their work station before packing up pasta dishes to bring home.

Winter fish includes recipes for Fragrant pan fried mackerel fillets, pan fried plaice fillet, brown shrimp, crushed potatoes Papillotte, Cod with Puy lentils and red wine jus, Saffron and white wine mussels,and two classic sauces to go with your fish – Mayonnaise and Remoulade.
We also add a sneaky “cheat’s soufflé” for dessert.

We love the way this class results in simple euphoria – so great is the joy of baking perfect bread!
Our experienced artisan bakers will guide you through fresh and dried yeast, the impact of different types of flour, the secrets of rising, shaping and proving and what is required to make amazingly good bread time and time again.
No previous experience or a dab hand already? Either way, this class will open your eyes to what makes good bread. We start with coffee and cake and finish with a light lunch with wine. You will leave with groaning bags of fresh bread and we recommend creating some space in your freezer prior to the class!
We make a classic, basic white yeast risen dough for a White Tin; a baking soda risen, rich and savoury Scandinavian Soda Rye loaf, we learn how to make enriched dough for feather light little Rye rolls and finish off with our legendary Swedish Cinnamon buns, getting to grips with a sweet, seriously enriched dough. You will leave with a solid grasp of how to make yeast risen dough, with the confidence to expand on it at home.

Designed for complete novices in the kitchen, as well as those who cook but crave a more solid basis. The class is a little longer than our standard classes, and puts in place key skills and an understanding of how essential cooking works. Don’t be ashamed to admit this course is for you even if you have cooked for decades – many of us end up in a rut and feel that we lack essential skills to underpin our activities in the kitchen. This class is informative, friendly, fun and utterly hands on.
We cover eggs, such as perfect 5 second scramble and fool proof poached eggs; how to make a good sponge cake; how to make fluffy, buttery mash; perfect rice and al dente pasta; how to cook steak, make a decent Bolognese, a Green Thai Curry and a seriously good crumble.
The class culminates with a sit-down meal with wine and, as usual, guests leave with full recipe packs as well as full stomachs.

This master class covers fool proof Croissants, Pains au Chocolat, Brioches and Baguettes Viennoise with a variation of fillings.
As usual, everything is completely hands-on under our chefs’ expert guidance. You will leave the class with bags groaning with warm pastries.

Our seasonal Italian classes bring sheer joy. With our deep knowledge of Italy and Italian food, these classes effortlessly breeze through hand made pasta, classic sauces, daily bread, main courses epitomising the essence of Italian food and delicious desserts.
The essence of Italian cooking is seasonality and local produce. Rarely is the allure of Italy stronger than in late winter when summer seems so far away. For a promise of warmer climes and aromatic food, our winter Italian kicks off with a herb and tomato Focaccia, followed by freshly made Tagliatelle and a creamy Porcini sauce. We then move on to a dish which has become a firm family favourite with previous guests, our crunchy herb crusted, organic chicken thighs and a winter salad of bitter leaves, anchovies and capers. We finish off with a delicousley fragrant Pear, Almond and Lemon torta.
We start with cake and great Italian coffee from our café and finish with a huge lunch with wine.
Full recipe packs are of course also included.

To our regular guests in the café, our signature cake style has become much loved and sought after. With a focus on seasonal ingredients and on flavour, our small team of Leiths and Cordon Bleu trained teaching chefs share a love of simple, but refined, modern cakes. We don’t over egg or over ice, we use fresh and seasonal ingredients, and we don’t fill with rich butter creams or cover in icing requiring turn tables or levellers. Our cakes are quick and easy to make, light on the waistline but packs a punch on the palate.
The same approach applies to our festive baking – it is delicious, it is beautiful but it is not very rich or overly traditional not least as we are inspired by Scandinavian baking, being owned by Scandinavian chef Tine Roche. We like recipes which encourage children to lend a hand and tempers to remain calm. Freshly baked goods fare best in the freezer, if not immediately consumed, and we suggest you allow this class to prompt you into a freezer clearance ahead of you returning home with plenty of pleasure to freeze ahead of the holidays.
